View Full Version : Looking for easy Spanish recipes

My son has International Day in school on Thursday, and I have been scouring the internet looking for easy recipes for us to make that do not have to be refridgerated or heated. I have a couple of recipes, but was wondering if any one has any they would like to share?

I will be eternally grateful for any advice, suggestions and of course recipes. :)

mmmm Spanish food! Tapas are easy, and manageable for school shows.

Olives are very popular in Spain, stuff them with almonds or fry them in a bit of egg and flour... Chickpeas and Spinach are good...

You could make stuffed potatoes too ... boil some new red potatoes, hull out the insides and mix with sour cream, olives, and capers. I've always thought of these as a Spanish version of our deviled eggs.

or Alioli Papas (serves 4 to 6)

7 medium sized potatoes
1 garlic clove
1 cup mayonnaise
Salt
Parsley, minced

Boil the potatoes, unpeeled, using plenty of water. Peel them, cut them into medium sized pieces and sprinkle with salt. When cold, cover with the Alioli sauce which is prepared separately. Sprinkle with plenty of parsley and mix well (carefully).
Alioli sauce: mix the mayonnaise with the raw garlic clove, peeled and crushed in the mortar to a thin paste.

Bravas Papas (serves about 4)

4 or 5 medium sized potatoes
Salt
2 cups olive oil

For the sauce:
1 cup tomato sauce
2 tsp mustard
4 drops Tabasco sauce

Peel the potatoes and cut into medium sized cubes. Fry for a while in warm oil, then in very hot oil to brown them.
Drain the potatoes and sprinkle with salt.

Or the easy way -- buy a package of hash brown potatoes and fry them up, making sure they seperate well.

Add mustard and the Tabasco to the hot tomato sauce, mixing well.

Spread the sauce over the potatoes

mmmm chickpeas and sauce.... not too hard:

1 can chickpeas
1/2 green pepper
1/2 red pepper
1/2 green chilli pepper
1/2 onion
1 garlic clove
olive oil
sprinkle of parsely, sprinkle of salt
and about 1/2 can of tomatoes

chop up the peppers, garlic, and onion, and sautee in oil until crisp-tender. Add parsely, tomatoes, and salt, and cook on very low heat for 1/2 an hour. Then add the chickpeas and let cook another 5 or 10 minutes. Serve over potatoes or rice.

And then there's Gazpacho:

1 cucumber
1 red onion
1-2 cloves of garlic
1 red pepper
1 green pepper
1 big can of tomatoes

Throw it all in the cusinart and puree into a soup -- serve chilled.

My grandma also used to make deviled eggs with pimentos which is easy, and tasty...

and oil and vinegar! i forgot to tell you to put the oil and vinegar in the gazpacho! about 1/3 cup of each...

This is going to sound to simple but it is one of my favorite foods. It can be eaten alone or wrapped up in a tortilla.

Easy Rice and Beans:
Mix up:
Cooked brown rice (about 2 cups or a little more)
1 can of black beans, drained and rinced.
1 can of chopped tomatoes
1 jar of salsa

It microwaves well so if the school has one you can heat it up or it can be made in the morning and eaten at room temp.

Amazon, do the recepies have to be Spanish Spanish or can they be Mexican, South American, whatever? The two I gave you are Spanish, but I have a bunch of easy mexican ones, too...

If they could be Mexican it would be sooooo much easier! Lol!

No, it's supposed to be food from the country that you are learning the language of. He is taking Spanish, so I assume it should just be Spanish food. And since it is all the different language classes, that means alot of students. That's why I ruled out refriderating and heating for it to be easier to serve. :)

Your recipes are great.....I am getting hungry now reading everyone's recipes! :P

Thank you everyone, if anyone has more, I'll take them....whatever we don't make for school, we'll make for us. :D

Snippet is right, Tapas are the easiest, most authentic Spanich food.

The time before lunch and the time before supper are devoted to the tapeo ritual. Spanich people tend to eat very late, and like to snack on tapas (also called tasqueo, ir de vino, poteo, or chiquiteo.) People go from place to place (tascas and mesones) and have tapas (little dishes) at each. The most common Tapas are salted almonds, olives, muscles, tuna fish, or a potato omlet. Drinking is also a part of tapas, and non-alcholic cider would be appropriate to serve to children along with tapas.

Easiest way to make Tapas:
Buy marinated, spiced olives.
Buy box of spanich rice (I like mahotma)
Eggs

Boil desired number of eggs. Cook rice according to package directions.
Shell and cut eggs in half, discarding yolk, or keep for something else. Stuff eggs with rice. Serve on platter with marinated olives.

ah cool! I've never had a plantain before. hope they were well received. My daughter had to do this same thing... only we had Wales.

After some searching we decided on welsh cakes.
