View Full Version : Eggs (from my head down to my legs)......
Karen April 9th, 2003, 10:13 AM I love eggs. Lately I just crave them like crazy (no I am not expecting :P )
I don't eat them a lot because I've read a lot of negative things about them. Not the cholestrol and heart disease, but the poor omega-balance and the chemicals.
But organic eggs are financially out of the question right now and I don't have access on a regular basis.
Pros,cons, and recipes are all requested.
Rachel April 9th, 2003, 10:16 AM Do you have access to free range eggs? Here in BC, they're usually the same price as those you'd buy in the store. It's the next best thing to organic, imo.
I'll check through my recipe box, and see if I can't come up with something for you! Not that I'm all that keen on eggs, anymore - a year or two ago, I was severely ill and one of the only things I could have for breakfast was eggs... just about every day, for almost a year. Now, when I taste them, I find it difficult keep them down.
Probably all psychological from having hard boiled eggs that often!

Baked eggs.
Take desired number of eggs, mix in anyting leftover in the fridge and desired seasonings until mixture is just thinner than an omlet. Bake at 400 until set.
Potatoes and eggs, carrots and eggs, fennel and eggs, leek/potato/eggs, spinich and eggs, ... ARTICHOKE and eggs. yum.

tamuller April 9th, 2003, 03:36 PM Do you know anyone who has chickens? A neighbour of mine raises them and he is always trying to give us extras and we don't eat them! Can you trade something for eggs? If you like to bake, maybe you can trade a batch of muffins for some eggs. Is there anything else you can barter? Have you checked your local natural/healthy foods markets for notices from local egg growers, can you place a notice saying you'd like to trade something for fresh eggs? Any way you could keep some laying hens, yourself, if your living situation allows for it? That would keep you in eggs! Maybe you could even sell the extras?

We have chicks and we are raising them for the eggs(would NEVER eat a pet).

I agree and energetically speaking, they're also much better than buying eggs from chickens that are cooped up, standing room only, poor babies! Imagine how unhappy those cramped chickens must be! :(
I love eggs too Karen, but I can't really help with recipes. I like eggs plain, I love the taste of a nice fresh egg all on its own. Poached, boiled, over easy, scrambled, I love 'em.
You might try, if you like potatoes, some recipes like potato pancakes or the ones that bake in the oven, they have eggs in them.
snippet April 9th, 2003, 08:09 PM I too love eggs. I like them scrambled and boiled mostly. I just discovered deviled eggs and love them too. I'm lucky in that my aunt raises chickens and sends them my way when they are laying.
Here's what I eat regularlly:
- egg and potato tacos (frozen potatoes work well)
- sausage and egg tacos - actually its chorizo, but y'all can use sausage
- huevos rancheros - fry a tortilla, and put a fried egg on it. then cover with salsa
- eggs mexicana - sort of a scrambled eggs and melted cheese concoction.
- egg salad sandwiches
- stir a beaten egg in Lipton's chicken noodle soup.... mmmmm
- add scrambled egg and seaweed to ramen ..... I lived on this when I was in college

Do you need to add milk or anything to water it down?
euphrasyne April 11th, 2003, 06:21 AM You can add milk if you like, but it is not necessary. It depends on what consistancy you like your eggs. If you usually add milk to your scrambled eggs, you might want to add milk to this. If you like a thicker "egg bake," you can add about a tablespoon of flour for every three eggs.
Sometimes I add the flour and milk and pour the mixture into a crust to make a quiche-like entree for dinner.
Btw--link sausage and apple slices in egg bake=heaven.

Okay, incase you don't like that idea, if there is anyone near you that owns chickens, they'd be more than happy to sell the eggs, I am sure (that cracked corn IS expensive!!!). Tape a note to the door with your phone number.
Hens are no trouble at all. Do you have a back yard?
smiles April 19th, 2003, 10:14 AM eggs are not bad if taken in moderate amount. i read in an article abt this. lemme see if i can find it for u. guess its 5 yolks a week till 30 yrs and 4 after that. egg whites can be eaten daily upto 4 counts. the ones you get in normal groceries are GMO. i.e., genetically modified. those are not good. as other ppl suggested - you can go for farm raised ones or check out the pack if its non-GMO.
i love eggs too. very good source of protein and lot of vitamins. ever since i went lacto-ovo-vegetarian, i've been eating eggs. an yolk and 2 whites for breakfast... and save the remaining yolks for weekend hair treatment.
actually organic eggs are not expensive in traders joes!
traders joes is a chain of store that sell mostly organic or natural stuff. they are small in size compared to whole foods and are 50% less expensive than whole foods. i went there yesterday to buy evoo and eggs got 2 dozens of organic extra large eggs for $2.58.
i also saw the jojoba oil that i got in whole foods less expensive here. 2 oz for 8 bucks in WF and here 4 oz for 8 bucks!

recipes: hmmm, u can make omelettes :D yumm yummm....

i put onions, tomoatoes, green peppers, red peppers, cabbage, cauliflower, carrots, parsely, basil leaves, spinach, choyote, et al.
if u have a food processor, toss a piece of all veggies you have, and shred them into thin slices. beat the egg and the yolk with 1/2 spoon oil, 1/2 spoon milk and 1/2 spoon water. this fluffs the omelettes :D add salt and powdered black pepper, mix in the veggies. grease the saucepan and pour using a ladle. flip it after 3 mins and there u go! :D
i dont have recipes for these - but they are yummy egg dishes - devilled egg salads, egg fried rice, etc...
i have lot of recipes for south indian style egg dishes which are hot and spicy. if you are interested, i'll post them.

forgot to mention: raw eggs ARE bad. raw egg white deplyte biotin. raw eggs lead to food poisoning! eat them always cooked well.
Grenwich April 20th, 2003, 03:15 PM I eat a hardboiled egg just about every day for lunch, with a huge salad and naan bread. Boring, but it works for the diet.
On one weekend morning though, we have FEB or FAB ( full English or Full American Breakfast) and so things don't get stale I always cook the eggs differently.
Poached eggs - in a shallow skillet filled with simmering water - add a tablespoon of white vinegar and eggs will set immediately, use a spoon to make a whirlpool, and the egg will wrap itself into a neat little ball.
Bake eggs in either a tomato half or green pepper half. Slice veggie in half, clean out seeds drop egg into hollow, season to taste with salt, pepper, garlic, chili powder parmesearn cheese, whatever, and then bake at 300F for 10 minutes for overeasy's ( runny yolk) or a little longer for solid eggs.
Cheryl covered the egg bake. I love those too.
I also make breakfast sandwiches on bagels sometimes with a hard cooked egg, a patty of sausage and a slice of swiss....mmmmmmm
Eggs, potatoes and sausage are one of my favorite comfort dinners.
Eggs are awesome, I buy Egglands Best free range eggs - 12 for $2.99.
Worth every penny.
The National Egg board ought to yield some good recipes too!
